Herb Honey Mustard Salmon
Weeknights are stressful enough as is, so any recipe that’s healthy, flavorful, and quick is always a plus in my book. I love making complicated dishes but weeknights are not the time nor the place. I have little patience to clean up 184 dishes after a long day at work.
This recipe is nice and light and uses minimal ingredients and minimal pots and pans. I highly recommend using a cast iron pan because it adds a nice flavor and allows the salmon to cook a little better. If you don’t have one you can always use an oven proof pan.
Keep in mind that your salmon cooking time will vary a little bit based on the size of your filets and also how well done you like your salmon.
Serves 4
Ingredients
4 salmon fillets (about ____ oz each)
½ cup olive oil
1 tablespoon honey
2 tablespoons dijon mustard
1 tablespoon herbes de provence
Salt and pepper to taste
Directions
Preheat your oven to broil and move your rack up high.
Whisk the olive oil, honey, dijon, and herbes de provence in a bowl until combined.
Heat up your cast iron on medium high heat and add a small amount of olive oil. (Give your cast iron a few minutes to heat up properly since it’s thicker than a normal pan.)
Salt and pepper both sides of your salmon filets.
Add your salmon to your cast iron skin side down. Let cook for 2 minutes.
Add honey mustard mix to the top of the salmon and flip over.
Let cook for 2 more minutes and then transfer to oven to let cook for another 3 minutes.
Remove from oven and let sit for one minute. Check that the internal temperature of the salmon is around 140 degrees fahrenheit and serve immediately.
