Ricotta Herb White Bean Dip

As much as I can sometimes be a bougie bitch, I really am a born and raised Midwesterner through and through. I love ranch dressing and deep fried food is delicious. Many of the apps at our large family gatherings revolved around various kinds of chips and dips. I am an absolute FIEND for salty food. I have literally convinced boyfriends to stop buying me chocolates and start buying me chips.

With that being said, I have come to the realization that one cannot eat the same refried bean dip indefinitely because a) we probably won’t all have this metabolism forever and b) eating something green and protein packed is probably a better move longevity wise.

Like Bubba Blue from Forrest Gump with his thousand and one uses for shrimp, I love finding new ways to uses different kinds of beans because they’re stupid cheap, nutritious, and packed full of flavor.

You will need a food processor for this recipe (you can try with a blender but unless it’s a really good one, I don’t think it will break down the ingredients enough.)

This recipe is great on it’s own with chips, crackers, or freshly chopped veggies, or you can also use it for my Not so Basic Bitch Veggie Sandwich.

It keeps well in the fridge and actually tastes even better when it’s made a little bit ahead of time.

Ingredients

2 cans cannellini beans

3/4 cup whole milk ricotta (can use reduced fat, but will be less flavor)

4 table spoons fresh squeezed lemon juice

Half a bunch of parsley (freshly washed)

3 cloves garlic (Peeled and ends cut off)

Salt, pepper

A few tablespoons of olive oil 

Instructions

  1. Open cans of canned beans and drain and rinse the bean juice off (honestly I don’t know what it’s called, but rinse it off).

  2. Add the beans, ricotta, lemon juice, garlic, and 1 tablespoon olive oil to food processor.

  3. Blend until creamy and then slowly add more olive oil and the salt and pepper to taste.

  4. You can adjust some of the ingredients based on preference (if you like it more lemony then go ham with that.)

  5. Take out of food processor, put it in the bougie looking serving bowl you have and serve with chips, crackers, or veggies.
