crustless breakfast frittata
This recipe is gluten free and the perfect, easy healthy breakfast option. It looks so beautiful and is so simple.
Frittatas are the ideal brunch option since they’re so low maintenance and the ingredients can be switched out to your preference.
Serves 3-4
Ingredients
1 potato peeled
6 eggs
Half red bell pepper sliced
Half green pepper sliced
¼ cup cooked broccoli
Sliced mozzarella
Jalapeno chicken sausage (optional)
½ teaspoon Onion powder
½ teaspoon Garlic powder
Salt and pepper to taste
½ cup chopped fresh basil
A few tablespoons olive oil
Directions
Preheat oven to 375 degrees fahrenheit.
If using chicken sausage, brown in frying pan over medium high heat until cooked through.
Remove from heat and set aside, once slightly cooled cut into pieces
Add a few tablespoons of olive oil to a preheated skillet and make sure to evenly coat the pan.
Thinly slice your potatoes roundways and set in oil in an even thin layer in a hot skillet, let cook for a few minutes, being careful to slowly move the potato slices around so none stick to the pan.
When nice and brown on one side use a spatula to flip the potato layer over to cook the other side.
Add your eggs to a bowl and whisk well, adding salt, pepper, garlic powder and onion powder.
Pour over the potato layer and add chopped veggies, then top with cheese and basil.
Cook on stovetop for 5 minutes, and then transfer to oven to cook for another 10 minutes.
Remove from oven when center is cooked through and serve with a side salad or crusty bread.
